How do you play a song on a guitar from traditional sheet music?

I know how to read tablature, and as a pianist I’ve been able to sight-read sheet music for going on 15 years. However, I’ve been playing a guitar for a couple years but I’d like to learn how to play from sheet music instead of tabs. For electric guitar, how do you develop your own tone, apart from equipment and amp settings?

Like how Jimi Hendrix has that shuffly sound for his rhthym guitar and that free sound for his solos, or Jimmy Page got the thick sound out of a telecaster, and Zakk Wylde has those extreme pinch harmonics. How do you prevent acoustic guitar strings from popping?

I’m playing around with altered tunings (non-EADGBe), like Andy McKee or Don Ross songs, and every time I try to change tuning, I pop a string. The last one popped when I was REDUCING tension, not raising. Is there any way to either prevent or help reduce broken guitar strings? Tips of any sorts? Strings to buy? Thanks in advance.
